Chicken Pasta
It is sooo simple! As I am not an amazing cook like Mama Ulla but I try my very best...
Poor food of mine... :D
But this one is fast, easy and nutritious. The MOST IMPORTANT ingredient for us is the GARLIC. I come from Brazil and in my family we believe that garlic is the most important food ingredient because of its great health boosting qualities. Myself I started putting a little tiny bit of garlic in all B's food from the very beginning when she was only 5-6 months old and we cooked this little potato mash for her with my own milk. So she got used to the taste ever since and now we can use garlic in all recipes at home.
And believe me, it wont harm your baby in possibly any way to feed them garlic from the beginning if you feel like. And Baby B. has such a strong immunity system nowadays and I like to think it's because of all the garlic I've been feeding her... hehe.. :D!
4 dl of pasta (I like to use whole wheat)
250g of natural or marinated chicken cubes
cherry tomatos - cut them in half.
2 hand full of chopped broccoli
half red onion (chop in big or small pieces)
garlic (as much as you like) - I use "teeth" of garlic.
chick peas - half a box/can
cream - I really like to use crème Bonjour, lactose free, Pepper flavor - I use half a portion.
fresh rucola
lemon juice (you can always use fresh lemon) - half a lemon does it.
salt and pepper - as you like
First I put 2 table spoons of butter in the frying pan. Right away when it melts, add the chopped garlic.
When the garlic is yellow (takes couple of seconds), add the chopped onion and fry a little.
Add the chicken cubes. Add salt and pepper (as much as you like or as much as your little one accepts).
When the chicken is half way through frying process, add the broccoli, chick peas and the crème (don't add too much crème so it doesn't get too wet). When it's about to be ready, add the cherry tomatoes (so it won't over cook and will keep its vitamines)
When it's ready, put everything in a bowl, spring some lemon juice over and mix a little (carefully). Add some fresh rucola on top of it and Voilà!
Because its not too wet, little ones, who aren't masters of using the forks, can easily eat with their hands every bit of the ingredients and taste its different flavors.
The whole family can eat together!
